Bacon Quinoa Spinach Muffins With Egg and Onion
Many of you know that I have been working hard on a very structured 80-day fitness and nutrition program that utilizes timed nutrition. It has required me to get a little more creative when it came to what I was eating and WHEN I was eating it. One of the required pre-workout meals needed to contain a protein, a carb, and veggie. This combo allowed me to get that container requirement in.
I hope you will all give this easy combo a try for something new at breakfast time. Enjoy!
Serving = 3 muffins
Ingredients
- 1 cup spinach
- 1 Tbsp. green onions
- 1 egg, scrambled
- 2 slices cooked turkey bacon, chopped
- ½ cup cooked quinoa
- 1 tsp. olive oil
Heat oven to 375° F.
Cook the spinach with olive oil until just wilted. Transfer spinach to a bowl, add all of the remaining ingredients and stir to combine.
Spoon the mixture into a muffin pan lined with muffin cups or coated with nonstick spray. Press into pan. Bake for 20 minutes. This amount of ingredients makes three muffins (one serving) and can be easily multiplied to make more.
So does this recipe only make 3 muffins (or 1 serving)?

ReplyDeleteIt looks like there are other things in there like tomato and carrots or am I just seeing things? Definitely sounds good!
ReplyDeleteMIne would not stay together. fell apart when taking them out of muffin tin. What did I do wrong?
