Sirlon Steak and Broccoli Stir Fry

Sirlon Steak and Broccoli Stir Fry

My husband has been doing the Body Beast workout program and it came with a fantastic cookbook like many of the Beachbody programs come with. This evening we decided to give the stir fry a try. It was a nice change from all the chicken we have been enjoying lately! Simple, fast and clean!

Makes 4 servings
1 cup each

Ingredients
1/4 cup low - sodium organic tamari soy sauce
6 tablespoons of water
2 tablespoons of tapioca startch
1 tablespoon of raw honey
1 pound of sirlon beef cut and trimmed
1 teaspoon of coconut oil
4 cups of broccoli florets
2 cloves of garlic
1 teaspoon of fresh ginger root

Directions
1. Cut sirlon into bite size pieces and trim fat
2. In a small bowl combine soy sauce, 4 tablespoons of water, 1 tablespoon of tapioca starch and honey; mix well; set aside
3. Combine remaining 1 tablespoon tapioca starch and 2 tablespoons water in large bowl; mix well. Add beef: toss to coat
4. Heat coconut oil in a large skillet cover over medium heat and add in sirlon. Cook until meat is no longer pink
5. Add in broccoli, garlic and ginger to pan and cook for 2 - 3 minutes sitrring often.
6. Add soy sauce mixture to skillet and cook over medium - high heat stirring constantly for 30 seconds or until thickened.
Remove from heat and enjoy!

Broccoli could be subbed for other veggie options such as zucchini, peppers, snow peas, carrots asparagus or water chestnut.
