Banana Chocolate Chip Baked Oatmeal

The Best Breakfast In Town...



This is hands down an all time favorite meal at our house. My hubby requests it weekly. I love it too and I love that it is something that I can use for a few days as a breakfast option. It reheats really well and I always have leftovers when I make a big pan full of it. Enjoy this one. I am willing to bet it becomes a household favorite for you.

Ingredients 
2 cups of gluten free rolled oats
1/4 cup light brown sugar
1/2 teaspoon of salt
1 teaspoon of baking soda
1 teaspoon of ground cinnamon
2 cups of vanilla almond milk
1 egg
3 tablespoons of melted coconut oil
1 and 1/4 teaspoons of vanilla extract
2 ripe bananas cut up
1/2 - 1 cup of chocolate chips depending on how much you would like

Directions
Preheat the oven to 350 degrees and spray an 8x8 pan with coconut oil.
Combine dry dry ingredients in a separate bowl (oats, salt, cinnamon, baking soda, brown sugar)
In a separate bowl combine almond milk, melted coconut oil, vanilla, banana,egg and choclate chips.
Pour wet ingredients into the dry mix stir it all together.
Pour into the 8x8 pan and bake for 40 minutes uncovered.

Avocado Eggs

Lately I have been trying my best to include avocados into my food options as often as I can. I love the taste and I love the health benefits that come from including avocados into your daily diet. Just one avocado contains around 10 grams of fiber, it can help lower bad cholesterol levels and are said to be an anti- aging powerhouse. Just a few reasons to give them a try.

I had seen a lot of people using them to cook eggs in on Pinterest and wanted to give it a try myself. It was so simple. I cooked them in the oven for about 20 minutes on 375 degrees.

I took the center out of the avocados and some of the avocado meat then cracked my egg into it. I topped it with a tiny sprinkle of cheddar cheese, salt and pepper.

I loved it! I also had a slice of bread (gluten free for me) and spread it all over the bread almost like a topping. It was a fabulous combo!

Obsessed sums up how I feel about vegan tropical strawberry Shakeology. I had held off for almost a year to try it. It just didn't seem like my thing. I was not a fan of regular strawberry flavored Shakeo so I didn't think I would like this either. Well when I was on the success club trip to Cancun this past spring they had a Shakeology bar there for us. I decided to give the vegan formula a try since I wasn't going to have to buy lots of it just to try. Much to my surprise,  I LOVED IT!! As soon as I got home I actually switched over my home direct to this flavor so I can enjoy it all the time! Worth trying! 

Ingredients 
10 ounces of ice
10 ounces of water
4 ounces of vanilla almond milk 
1 ripe banana 
1 scoop of Tropical Vegan Strawberry Shakeology 

Directions 
In a shaker cup combine ice, water and almond milk 
Pour into the blender 
Add in one scoop of Shakeology and the banana 
Blend for one minute 
Enjoy

Cashew & Oat Hotcakes

Cashew and Oat Hotcakes 


While doing the 21 day fix extreme one of the things that are not on our approved list of foods that I can have is pancakes. They really are not my thing but son loves them. Especially ones that look like Mickey Mouse. We had a 2 hour delay earlier this week so I dedicded to make these cashew and oat cakes for him. This was so much healtheir for us than a box of pancake mix! I was worried when he took a bite that he not be a fan but I totally tricked him :) Give it a try for your little ones and let me know if they approve!

Ingredients
2 cups old fashioned rolled oats
1/2 cup raw cashews
1 dash of sea salt
1 tsp of ground cinnamon
1 large eggs
1 tbsp coconut oil melted
1 1/3 cup of water
1 tsp of pure vanilla extract

Directions 
Place oats, cashews, salt and cinnamon in a food processor or blender. Pulse until coarsely ground
Add in egg, oil water and vanilla extract pulse until well blended
Batter will be thick but if it is as thick as paste add 2 - 3 tablespoons of water
Heat a medium nonstick skillet, lightly coated with spray or more coconut oil
Spoon aboout 1/4 cup batter into skillet for each pancake
Cook for 1 - 2 minutes or until bubbles form on top
Filp and cook for 30 seconds

Makes 10 servings - 2 hotcakes each

Serve - We topped with cashew butter and my son also added strawberries to his.

Chocolate Banana Bread Shakeology 



Okay talk about a new favorite! One of my coaches came up with a recipe that was similar to this one, so I decided to modify with what I had at home and it tastes amazing. Give it a try and let me know if you love it too!

Ingredients:
1 scoop of chocolate shakeology
10 oz of water
4 oz of vanilla almond milk
Ice as desired ( I do about 8 oz of ice)
1 ripe banana
1 teaspoon of cinnamon
10 walnuts
1/8 of vanilla extract
1/8 of banana extract
1/3 cup of rolled oats

Directions
Mix water, almond milk, ice together and dump into the blender
Add in other ingredients and blend for 1 minute.
ENJOY!
This one will really fill you up!
